Pork Chops

When I discovered this recipe I decided it was the best way to prepare pork chops. I don't care to cook them any other way.

  • Searing pork - 5min
  • Reducing sauce - 10min
  • Simmering - 20min?
  • Reducing sauce - 10min

Ingredients

  • Pork chops - 4
  • Oil - 2 tablespoons (30ml)
  • Butter - 2 tablespoons (30ml)
  • Garlic - 16 whole cloves
  • Red wine - 1 1/2 cups
  • Bay leaf
  • Beef Broth - 1/2 cup
  • Balsamic vinegar - 1 tablespoon (15ml)
  • Salt
  • Pepper
  • Butter - 1 tablespoon (15ml)

Method

  1. Salt and pepper both sides of pork
  2. Sear in a pan with oil and 2 tablespoons butter
  3. Remove chops, lower heat to medium
  4. Add garlic, wine, bay leaf and reduce a bit
  5. Add broth, balsamic vinegar, and pork chops (they should be swimming)
  6. Reduce until cooked
  7. Remove pork chops to rest
  8. Add remaining butter to pan with salt and pepper and reduce sauce until thick
  9. Pour sauce over chops
