Lasagna

I've been making this with spaghetti noodles because I never have the large flat noodles in my pantry. It turns out fine. I think you could probably use any sort of pasta.

  • Make noodles - 20min
  • Bake - 50min
  • Cool - 15min

Ingredients

  • Sausage - 1lb (450g)
  • Onion (minced) - 1/2 - 1 cup
  • Garlic - 2 cloves
  • Crushed tomatoes - 1 28oz (800g) can
  • Tomato paste - 2 6oz (170g) cans
  • Tomato sauce - 2 6oz (170g) cans
  • Water - 1/2 cup
  • Sugar - 2 tablespoons (30ml)
  • Basil - 1 1/2 teaspoons (7ml)
  • Fennel - 1/2 teaspoon (2ml)
  • Italian seasoning - 1 teaspoon (5ml)
  • Salt - 1 teaspoon and 1/2 teaspoon (5ml and 2.5ml)
  • Pepper - 1/4 teaspoon (1ml)
  • Parsley - 2 tablespoons and 2 tablespoons (30ml and 30ml)
  • Pasta - 1lb (450g)
  • Ricotta - 16oz (450g)
  • Egg
  • Mozzarella - 1lb (450g)
  • Parmesan - 3/4 cup

Method

  1. Use a deep pot to cook the meat sauce
  2. Cook sausage until brown then add onion and garlic and cook until soft
  3. Add tomatoes, water, seasoning (only 1tsp of the salt!), and half the parsley
  4. Simmer 90min
  5. Make noodles and rinse in cold water
  6. Combine ricotta with egg and parsley and 1/2 tsp salt.
  7. Preheat oven to 375 (190)
  8. Add a layer of meat sauce to cake pan
  9. Add a layer of noodles
  10. Add a layer of ricotta
  11. Add a layer of meat sauce
  12. Add a layer of noodles
  13. Add a layer of ricotta
  14. Add a layer of mozzarella
  15. Cover in foil
  16. Bake for 25min
  17. Uncover and bake for 25min
  18. Cool 15min
