Eulavees Source Cream Nuts
Eulavee was our neighbor two doors down when I was a child. I don't remember her, but my mom said she used to hang out with her when we first moved to Sanger. You can use any nuts for this recipe (even walnuts). I prefer pecans.

Ingredients
- Sugar - 1 cup
- Sour Cream - 1/2 cup
- Corn Syrup - 1 tablespoon (15ml)
- Salt - a small pinch
- Butter - 1 tablespoon (15ml)
- Vanilla - 1/2 teaspoon (3ml)
- Nuts - 2 cups
Method
- Stir the sugar, sour cream, syrup, and salt over low heat until the sugar reaches soft ball stage (238F / 114C)
- Remove from the heat, stir in the butter and vanilla
- Stir in the nuts.
- Turn out onto parchment paper and break up the clumps
Prepared
- 250408 - I only did a single batch, and it was too little for my smallest pot. I used a candy thermometer, but the tip of the thermometer couldn't reach the candy, so I had to push the mixture onto the tip as I stirred it and the pot slid around on the stove. While doing this I failed to notice it had passed 238F. I overcooked the sugar and the resulting candy was hard. Next time do a bigger batch or get a smaller pot.
