Cauliflower Rice
This is nothing special, but it turned out good enough to save the recipe.

Ingredients
- Cauliflower
- Almonds (sliced) - 1/2 cup
- Butter - 2 tablespoon (30ml)
- Garlic - 2 cloves minced
- Salt - 1/3 teaspoon (2ml)
- Pepper - to taste
- Chopped herbs (parsley/green onion/cilantro/basil)
- Lemon juice - 1 tablespoon (15ml)
Method
- Blend the cauliflower in a food processor
- Put it into a tea towel and squeeze the moisture out
- Toast almonds in skillet and remove
- add butter and toast garlic for 30sec
- Add the cauliflower, salt, and pepper cook 7-10min
- Add lemon juice and herbs
