Cauliflower Rice

This is nothing special, but it turned out good enough to save the recipe.

Ingredients

  • Cauliflower
  • Almonds (sliced) - 1/2 cup
  • Butter - 2 tablespoon (30ml)
  • Garlic - 2 cloves minced
  • Salt - 1/3 teaspoon (2ml)
  • Pepper - to taste
  • Chopped herbs (parsley/green onion/cilantro/basil)
  • Lemon juice - 1 tablespoon (15ml)

Method

  1. Blend the cauliflower in a food processor
  2. Put it into a tea towel and squeeze the moisture out
  3. Toast almonds in skillet and remove
  4. add butter and toast garlic for 30sec
  5. Add the cauliflower, salt, and pepper cook 7-10min
  6. Add lemon juice and herbs
