Pizza
The ingredients are expensive, but this recipe reliably results in a delicious pan pizza. This was taken from here or maybe here.
The important part of this recipe is the thick cut pepperoni which will curl up into little oil filled cups when baked. Also you'll need to get a lot of mozzarella - probably two large bulbs.
This recipe calls for a 550F (290C) oven but I think you could do it at 450F (230C) on a hot pizza stone.
I don't have a good picture of the pepperoni cups. The picture above was an experiment with beef hot dogs and an old pepper.

- Making the dough - 10min
- Letting the dough rise in the pan - 2-3 hours
- Making the sauce - 25min
- Assembling ingredients - 10min
- Baking - 10-15min
Ingredients
Dough:
- Flour - 500g
- Water - 325g
- Salt - 14g
- Yeast - 6g
- Olive oil - 20g
Sauce:
- Olive oil - 2 tablespoons (30ml)
- Garlic - 9 cloves
- Oregano (dried) - 1 tablespoon (15ml)
- Red pepper flakes - 2 teaspoons (10ml)
- Tomatoes (in a can) - 800g (28oz)
- Sugar - 1 teaspoon (5ml)
- Salt
Assembly:
- Olive oil - 40g
- Mozzarella - 450g
- Pepperoni - 325g
- Pecorino cheese - 115g
Method
Dough:
- Knead for 6min until it's stretchy
- Pour 40g olive oil into the pan and spread to cover everything
- Add dough to pan and spread it out
- Cover and let rest on the counter 2-3 hours
- Carefully stretch the dough into the corners of the pan - retaining the air bubbles
Sauce:
- Heat oil until shimmering
- Add garlic, oregano, and red pepper flakes until aromatic
- Add tomatoes, breaking them into fine chunks
- Bring to simmer and continue 15min
- Season with salt
Assembly:
- Preheat oven to 550F (290C) 30min before baking
- Cut mozzarella into slices and spread over dough
- Smear with tomato sauce (not too much)
- Spread thick pepperoni slices evenly over surface
- Sprinkle with half the pecorino cheese
- Bake until pepperoni is crisp and curled (10min)
- Remove from oven and sprinkle with remaining pecorino cheese.
Notes
- Do not put a silicon sheet under the dough. It prevents you from cutting the pizza in the pan.
- Bake on top of a pizza stone to ensure the center crust is cooked.
