Peanut Butter Banana Chocolate Cookies

I heavily modified a recipe I found online and created my new favorite peanut butter cookies.

This recipe somehow avoids the chalky texture that peanut butter can bring, and the banana is subtle but definitely present.

The original recipe made a thick cakey cookie. I hate cakey cookies, so I did my best to make them chewy. They're still a little cakey but if you bake them a little longer they develop a nice crust.

This recipe also uses rolled oats. I'm not a huge fan of oats in cookies, but I'm making an exception for these.

Total preparation time is 30min or so

Ingredients

Wet Ingredients

  • Butter - 1/2 cup
  • Peanut Butter - 1/2 cup
  • Corn Syrup - 1/2 cup
  • Brown Sugar - 1/2 cup
  • Bananas (overripe) - 3
  • Vanilla - 1 teaspoon

Dry Ingredients

  • Flour - 2 cups
  • Rolled Oats - 2 cups
  • Baking Soda - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Cinnamon - 1 teaspoon
  • Chocolate Chips - 1 cup
  • Walnuts - 1/2 - 1 cup

Method

  1. Cream the butters, sugar, and bananas
  2. Add the vanilla
  3. Mix the dry ingredients separately
  4. Add the dry ingredients to the wet
  5. Mix in the chocolate chips and walnuts
  6. Bake at 350F (176C) for 15-17 minutes
