Peanut Butter And Ginger Cookies
I found this recipe in a cookbook at Aunt Jeananne's house during our visit to Texas. I've been looking for the best ginger cookie recipe and though I'm not sure this is it, it's the best I've found so far.

Ingredients
- Unsalted Butter - 1 stick (113g)
- Creamy Peanut Butter - 1/2 cup (125g)
- White Sugar - 1/2 cup (100g)
- Brown Sugar - 1/2 cup (100g)
- Molasses - 1 tablespoons (40g)
- Egg - 1
- Flour - 1 cup (130g)
- Ground Ginger - 1 teaspoon (5ml)
- Salt - 1/2 teaspoon (2ml)
- Baking Powder - 1/4 teaspoon (1ml)
- Baking Soda - 1/4 teaspoon (1ml)
- Crystallized Ginger - 1/3 cup (47g) finely chopped
Method
- Cream the butter, peanut butter, white sugar, brown sugar, and molasses until fluffy
- Add the egg and mix until incorporated
- In a separate bowl mix the Flour, Ground Ginger, Salt, Baking Powder, and Baking Soda
- Gradually add the dry ingredients to the wet until just combined.
- Fold in the Crystallized Ginger
- Refrigerate for 30+min
- Bake at 350F (176C) for 14 minutes.
