- 10min mixing
- 60min first rise
- 20min second rise
- 30min cooking
Ingredients
- Water - 142g
- Yogurt - 71g (alternatively milk and lemon juice)
- Flour - 270g (1/3 bread flour will make this extra chewy)
- Salt - 1 teaspoon (5ml)
- Sugar - 1 teaspoon (5ml)
- Soft Butter - 2 tablespoons (30ml)
- Instant Yeast - 1 tablespoon (15ml)
- Melted Butter - 1 tablespoon (15ml) or so.
Method
- Mix ingredients and leave in greased bowl to rise for 60min
- Divide into 8 pieces, roll into balls and set aside to rest for 20min
- Heat a cast iron skillet
- Stretch the dough balls into pancakes and put them into the skillet
- Brush the surface with melted butter, flip when it's toasted, and brush the surface again
- Repeat.
