Moms Cracker Jacks
So much better without the the peanuts she always added and better I think than the popcorn balls that would shred the roof of your mouth and gum up your teeth. I've been eating too much of this every christmas.
Total Preparation Time
Total preparation time is 120min
- 60min popping popcorn
- 15min melting butter and sugars
- 45min baking cracker jacks
Ingredients
- 10 cups popped popcorn
- ½ cup butter
- 1 cup packed brown sugar
- ¼ cup dark corn syrup
- ¼ teaspoon salt
- ¼ teaspoon baking soda
- ½ teaspoon vanilla

- 40 cups popped popcorn
- 2 cups butter
- 4 cups packed brown sugar
- 1 cup dark corn syrup
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 teaspoons vanilla
Method
- Pop popcorn (perferably in an air popper) and put into large oven at 250F (120C) while you prepare the sugars
- Melt butter in heavy pot
- Add the sugar, syrup, and salt to the butter and stir until it reaches a rolling boil
- Stop stirring and let it simmer 5min
- Stir in soda and vanilla (it will foam up)
- Pour over warmed popcorn and stir to combine
- Spread on a baking pan (or 2 pans for a 4X recipe) and bake at 250 for 45min stirring once
