Lemon Sugar Cookies

I was looking for a way to use up a windfall of lemons during a dark period when we didn't have any eggs and came across this recipe. The cookies it produced weren't the greatest but they were pleasant enough to make again.

Total preparation time is ~30min

  • 15min mixing
  • 15min baking

Ingredients

  • Butter - ½ cup (1 stick or 113g)
  • Sugar - ½ cup (100g)
  • Ground Flax or Chia seeds - 1 tablespoon (15ml)
  • Lemon Juice - 2 tablespoons (30ml)
  • Lemon Zest - 2 tablespoons (30ml)
  • Vanilla - 1 teaspoon (5ml)
  • Flour - 149g (heaped cup)
  • Baking Powder - ½ teaspoon (3ml)
  • Salt - ¼ teaspoon (1ml)

Method

  1. Preheat oven to 350F (177C)
  2. Cream the butter and sugar
  3. Mix in the other wet ingredients
  4. Mix in the dry ingredients until it just comes together.
  5. Form into small flattened balls and press into granulated sugar
  6. Bake for 10-14min
