Jambalya

A rough recipe - I haven't made this too many times but I've liked it each time. This is made from the dried leaves of the sassafras tree. From wikipedia: "Safrole and sassafras oil have been banned by the FDA as a carcinogen since 1960 and cannot be used in food manufacture for this reason. According to a study published in 1997, sassafras leaves (from which filé is produced) do not contain detectable amounts of safrole."

I made this with sarsparilla tea thinking this was also derived from sassafras but apparently it's from a different plant. I liked the sarsparilla flavor this imparted to the jambalya so maybe you should give it a shot.

  • Preparing ingredients - 20min
  • Saute sausage - 6min
  • Saute chicken - 6min
  • Saute onion - 6min
  • Combine and saute everything - 10min
  • Add stock and rice and cook down - 30min

Ingredients

  • Peanut oil - 2 tablespoons (30ml)
  • Cajun seasoning - 1 tablespoon (15ml)
  • Sausage - 10oz (280g)
  • Chicken - 1lb (450g)
  • Onion
  • Pepper (diced)
  • Garlic - 3 cloves
  • Tomato - 1 16oz (500g) can
  • Pepper flakes - 1/2 teaspoon (2ml)
  • Black pepper - 1/2 teaspoon (2ml)
  • Salt - 1 teaspoon (5ml)
  • Hot pepper sauce - 1/2 teaspoon (2ml)
  • Worcestershire sauce - 2 teaspoons (10ml)
  • File powder - 1 teaspoon (5ml)
  • White rice - 1 1/4 cups
  • Chicken broth - 2 1/2 cups

Method

  1. Cook rice in chicken broth
  2. Brown sausage in 1 tablespoon peanut oil and remove
  3. Brown chicken in 1 tablespoon peanut oil and remove
  4. Saute onions until tender
  5. Season sausage and chicken with cajun seasoning
  6. Add tomatoes and spices, meat, and saute 10min (will be dry)
  7. Add wet rice
  8. Cook until liquid is absorbed
