Jambalya
A rough recipe - I haven't made this too many times but I've liked it each time. This is made from the dried leaves of the sassafras tree. From wikipedia: "Safrole and sassafras oil have been banned by the FDA as a carcinogen since 1960 and cannot be used in food manufacture for this reason. According to a study published in 1997, sassafras leaves (from which filé is produced) do not contain detectable amounts of safrole."
I made this with sarsparilla tea thinking this was also derived from sassafras but apparently it's from a different plant. I liked the sarsparilla flavor this imparted to the jambalya so maybe you should give it a shot.

- Preparing ingredients - 20min
- Saute sausage - 6min
- Saute chicken - 6min
- Saute onion - 6min
- Combine and saute everything - 10min
- Add stock and rice and cook down - 30min
Ingredients
- Peanut oil - 2 tablespoons (30ml)
- Cajun seasoning - 1 tablespoon (15ml)
- Sausage - 10oz (280g)
- Chicken - 1lb (450g)
- Onion
- Pepper (diced)
- Garlic - 3 cloves
- Tomato - 1 16oz (500g) can
- Pepper flakes - 1/2 teaspoon (2ml)
- Black pepper - 1/2 teaspoon (2ml)
- Salt - 1 teaspoon (5ml)
- Hot pepper sauce - 1/2 teaspoon (2ml)
- Worcestershire sauce - 2 teaspoons (10ml)
- File powder - 1 teaspoon (5ml)
- White rice - 1 1/4 cups
- Chicken broth - 2 1/2 cups
Method
- Cook rice in chicken broth
- Brown sausage in 1 tablespoon peanut oil and remove
- Brown chicken in 1 tablespoon peanut oil and remove
- Saute onions until tender
- Season sausage and chicken with cajun seasoning
- Add tomatoes and spices, meat, and saute 10min (will be dry)
- Add wet rice
- Cook until liquid is absorbed
