Crispy Cauliflower Tacos

Taken from the june recipes, I've made the base recipe countless times. This actually encompasses three different pieces which I've made individually and all together a few times. The recipe asks you to carefully arrange the cauliflower pieces on the tray so they're barely coated and they don't touch but I've never been careful enough to follow that advice. If you have an air fryer use that. I might try cooking these in the baskets to try to get the surface crisper. It doesn't really matter, even when the sauce is still gloopy they're delicious.


Total Preparation Time

Total preparation time for just the cauliflower is ~30min. For the slaw it's 20min, for the cashew cream it's 5-6 hours.

Cauliflower:

  • Mixing cauliflower sauce - 15min
  • Roasting - 14min

Slaw:

  • Mixing slaw - 20min

Cashew cream:

  • Soaking cashews - 5 hours
  • Preparing cashews - 15min

Ingredients

Cauliflower:

  • Cauliflower - one head
  • Flour - 1-2 tablespoons

Cauliflower batter:

  • Flour - 1/4 cup
  • Almond flour - 1/2 cup
  • Chili powder - 1 tablespoon (15ml)
  • Garlic powder - 2 teaspoons (10ml)
  • Cumin (ground) - 2 teaspoons (10ml)
  • Salt - 2 teaspoons (10ml)
  • Paprika - 1 teaspoon (5ml)
  • Sugar - 1/2 teaspoon (3ml)
  • Milk (or milk substitute) - 3/4 cup
  • Hot sauce - 1 tablespoon (15ml)

Slaw:

  • Red cabbage (or whatever) - 2 1/2 cups
  • Jalapenos (sliced) - 1/4 cup
  • Green onions (or whatever) - 1/4 cup
  • Cilantro - 1/4 cup
  • Lemon juice - 2 tablespoons (30ml)
  • Olive oil - 1 tablespoon (15ml)
  • Salt - 1/2 teaspoon (3ml)
  • Pepper - 1/4 teaspoon (1ml)

Cashew cream:

  • Cashews - 1 cup
  • Water - 1/3 cup
  • Lemon juice - 2 tablespoons (30ml)
  • Apple cider vinegar - 1 teaspoon (5ml)
  • Salt - 3/4 teaspoon (4ml)

Method

Cauliflower Tacos:

  1. Cut cauliflower into bite sized florets, sprinkle and toss with flour
  2. Combine ingredients for the batter
  3. Combine florets with batter and arrange on baking sheet (or raised cooling rack on sheet)
  4. Roast for 14min (with convection if you've got it)

Slaw:

  1. Remove seeds and pith from jalapenos
  2. Remove hard core from cabbage
  3. Combine ingredients

Cashew Cream:

  1. Soak cashews in water for 5 hours
  2. Drain and combine with water and ingredients
  3. Blend until smooth
