Clementine Cake

Amanda stumbled over this recipe and I thought it sounded intriguing. Just an uncomplicated mixture of almond flour, baking powder, boiled oranges, sugar, and egg. I think this may be my favorite cake. I ran out of almond flour so I ground my own and the result was coarse but I think I may prefer it that way.

Apparently it only gets better the longer it sits out?

Total Preparation Time

Total preparation time is 90min with baking.

  • 15min boiling clementines
  • 10min mixing
  • 60min baking

Ingredients

  • Clementines - 4 (preferably seedless)
  • Eggs - 6
  • Sugar - 225g
  • Ground Almonds - 250g
  • Baking Powder - 1 teaspoon (5ml)
  • Food Processor
  • Pressure Cooker (not required)

Method

  1. Cover clementines in water and cook in a pressure cooker for 15min (or boil for 75min-90min on the stove top)
  2. Remove oranges from water, cut them in half and blend them in a food processor
  3. Preheat oven to 375F (190C)
  4. Grease and line a spring form pan
  5. Add the sugar, almonds, eggs, and baking soda to the food processor and mix until combined.
  6. Pour into pan and bake for 60min
  7. Cool completely before removing from the tin.
