Chili
The ingredients don't matter so much. Use what you have. You should use chili powder (or paprika and hot sauce in a pinch) and make sure your beans are cooked well. I do this in an instant pot which means it takes less that two hours rather than all day (as it would in a slow cooker).
This recipe makes a pot of chili.

Ingredients
- Beans - about 2 cups
- Can of tomatoes - 16oz can (420ml)
- Chili powder - 2 tablespoons (30ml)
- Cumin - 1 teaspoon (5ml)
- Oregano - 1 teaspoon (5ml)
- Salt - 1 teaspoon (5ml)
- Cayenne pepper - 1/2 teaspoon (2.5ml)
- Brown sugar - 1 tablespoon (15ml)
- Can of chipotle
- Onion
- Bell pepper (optional)
- Garlic (optional)
- Meat (optional)
- Whatever else you want in a chili
Method
- Cook the beans at high pressure for 20min and let them sit to depressurize
- Strain but keep the bean water
- Sautee the meat if you want.
- Throw everything into the pot and add bean water to cover a 30-50% of the ingredients, stir
- Cook at high pressure 40min
- Come at me bro.
Prepared
250107 - Made it with old celery and onions, a half used can of chipotle, mostly black beans (some pinto), and two 10oz cans of (pretty dry) tomato+pepper. For protein, I sauteed bacon bits and two chopped up hot dogs. The result was delicious as usual.
