Cardamon Buns

Cardamon is expensive, but these rolls are delicious. I bought a jar of cardamom seeds just for this recipe and the crunch when you bite into a seed and taste the spice makes this recipe.

Makes roughly 16 rolls.

Total preparation time is 120min

  • Boiling Milk - 30min
  • Mixing ingredients - 15min
  • Letting dough rise - 30min
  • Mixing ingredients - 10min
  • Rolling, combining, and cutting - 15min
  • Baking - 14min

Ingredients

Dough:

  • Flour - 450g
  • Milk (water, or floral tea)- 250ml
  • Butter - 75g
  • powdered cardamom - 1 tablespoon (15ml)
  • Salt - 1 teaspoon (5ml)
  • Sugar - 30g
  • Yeast - 1 tablespoon (15ml)

Filling:

  • Butter (room temperature) - 100g
  • Flour - 1 teaspoon (5ml)
  • Coarse ground cardamom - 1 teaspoon (5ml)
  • Brown sugar - 50g
  • White sugar - 50g
  • Salt - a big pinch

Before baking:

  • Egg - 1

Method

  1. Melt the milk and butter together and let cool to 37C
  2. Add the yeast to the milk solution and let it sit until foamy
  3. Mix in the other ingredients to make the dough, and set aside to rise until double in size
  4. Mix the filling
  5. Roll out the dough into a large thin sheet
  6. Spread the filling on the dough and fold into thirds from either side
  7. Roll the dough again to make it as large as possible without tearing
  8. Cut into pantaloons, twirl the legs separately, then together, and then tie them into a knot. (see picture)
  9. Brush with egg
  10. Sprinkle with sugar
  11. Bake at 425F (220) 14min swapping racks half way.
